How To Make A Chicken Marinade

When making a chicken marinade follow the following steps. The basics of any marinade can be broken down to two basic ingredient groups: Oil and Acid. Most marinades require two parts oil to one part acid. After the acid and oil are mixed together it is important to add three other groups of ingredients: Salt, Aromatics, and Sugar. These three ingredients will add flavor to the food that you are marinating.

The following list gives examples of ingredients that can be used to make a marinade.

1. Salt:
  • Kosher Salt
  • Sea Salt
  • Pickling Salt
  • Soy Sauce


2. Acid:
  • Wind
  • Vinegar
  • Fruits (Lemons, Oranges, Limes, Pineapple)
  • Yogurt


3. Oil:
  • Olive Oil
  • Peanut Oil
  • Sesame Oil
  • Vegetable Oil


4. Aromatics:
  • Garlic
  • Cracked Pepper
  • Zest (Lemon, Orange)
  • Sage
  • Rosemary
  • Thyme
  • Basil
  • Cilantro
  • Cayenne Pepper
  • Paprika
  • Onions
  • Shallots
  • Cumin
  • Chili Peppers


5. Sugar:
  • White Sugar
  • Brown Sugar
  • Honey
  • Molasses

When creating your marinade make sure to choose items that compliment each other. My favorite chicken marinade is Lime Juice, Olive Oil, Garlic, White Sugar, and Kosher Salt. Enjoy creating your own chicken marinade.
